Wilmington Bread Company specializes in naturally-leavened bread made with organic grain. Our mission is to make bread for our community that is superior in nutrition, digestibility, and taste.

We also have a selection of pastries, cookies, and sourdough pizza dough, all of which are produced with integrity from ingredients that are familiar and from sources that we trust.

We use time and temperature as ingredients to allow the natural yeast and bacteria present in our sourdough starter to ferment our dough, increasing flavor and digestibility.

All of our breads are sourdough, meaning naturally leavened without the use of commercial yeast. This process typically involves 24 to 72 hours of fermentation.
